Kale Salade Mixte
Here’s a healthy lunch idea that’s packed with flavour and vitamins. I love a light salad like this in the summer, it leaves me feeling refreshed and energises me as I work through the afternoon.
kale (the more tender the better)
sliced red peppers
My dijon vinaigrette was simply white wine vinegar, dijon mustard, olive oil, water, agave syrup, salt and pepper, and a splash of water.
Gently toss together all of the chopped/sliced salad ingredients with the dijon vinaigrette.
Serve on a beautiful plate to let these colourful vegetables shine!
